Santiago Lastra, the chef patron behind Michelin-starred Mexican restaurant Kol in London's Marylebone, is to open this second venue in Mayfair. Named after the family-owned eateries which serve traditional dishes in an informal setting in Mexico, Fonda showcases Lastra's take on regional Mexican cooking. The restaurant builds on the traditional concept and present recipes from across the country, with a focus on classic dishes. At its centre sits the comal, a traditional clay griddle used for cooking corn masa. Fonda's design conveys Mexico's artistic heritage, "paying homage to the old haciendas of the Yucatan, the textiles and crafts of Guanajuato, and the emerging designers of Mexico City".
Regional Mexican classics
Sikil Pak, a toasted pumpkin seed ‘guacamole’ with pine oil, will be served with fried totopos; chalk stream trout ceviche topped with thinly sliced squash aguachile and tostadas; Costras, a traditional taqueria staple of ribeye topped with a layer of melted Swaledale cheese on a flour tortilla & Baja tacos with a cucumber, pistachio and mint sauce, chipotle and sourdough.
