A British brasserie from Michelin star chef Jason Atherton

In the former Aquavit site in the St James’s Market development, Sael is the follow up to Mary’s from chef Jason Atherton. It’s an all-day affair, with breakfast, brunch, a prix fixe menu and a large à la carte with a particular focus on woodfire cooking. At the helm of the kitchen is Executive Chef Dale Bainbridge (formerly Pollen Street Social’s Head Chef) - overseeing the 85 cover brasserie - and showcasing a menu rooted in British culinary traditions - using ingredients sourced from the British Isles. 

The restaurant’s interiors feature intimate lighting, natural materials, and rich dark hues. Central to the décor is a hand-drawn mural by British artist Kay Harwood, depicting the four seasons, alongside walls adorned with photographs of British icons.

Above Sael is Apples & Pears, a bar offering an edgy, understated aesthetic where art and attitude intersect. The venue, decorated with works from the Young British Artists (YBA) movement, features a DJ booth for late-night entertainment.

Signature Dishes

A hearty Cumbrian lamb hotpot, and a unique hundred-layer heritage snail and ox cheek lasagne, a New Forest mushroom with potatoes and cep jam and the Marmite English custard tart.
